In 1986 Fausto and Rosella got married. Their first venture together was the “Diana” trattoria run by Rosella’s parents at Abasse just south of Ponzone. This little centre of dining excellence attracted the attention of Giacomo Bologna, one of Italy’s most important winemakers, who said to Fausto “only offer one thing – quality”. In the year 2000 Fausto and Rosella bought a 19th century farmhouse in Cavatore complete with the old cowshed. They completely restructured and restored the buildings whilst respecting the original architecture, but mixed some contemporary features into the old house. Cavatore is a tiny village some 500 metres above sea level and dominates the Monferrato hills with some breathtaking views. Today, as well as enjoying splendid cooking which is based on fresh, seasonal produce, guests can stay in one of our beautiful suites with large windows which look out over the Alps, from Monviso to Monte Rosa, and which at night offer an equally stunning and magical panorama.
